How It All Began
A Kitchen, A Dream &
The Perfect Dough
It all started in 2010 when founder Marcus "Jet" Deluca returned to his Chicago roots after years spent studying culinary arts in Naples, Italy. Inspired by the centuries-old traditions of Neapolitan pizza-making and deeply rooted in Chicago's own deep-dish heritage, he saw an opportunity to create something truly unique.
"Pizza is not just food — it's a moment shared between people. I wanted every slice at Jet's to be worth the memory."
Starting with a 400 sq ft space on W Armitage Ave and a wood-fired oven imported from Campania, Marcus perfected his signature dough recipe over three years of late nights and relentless refinement. The neighborhood noticed — and word spread fast.
Today, Jet's Pizza is a cornerstone of Logan Square's vibrant food scene, serving thousands of guests each month while staying true to the same handmade, locally sourced philosophy that started it all. We've grown, but we've never forgotten our roots.
